Buffalo Cauliflower Casserole: Easy to make… easy to eat!

This vegetable side dish takes the flavour of buffalo wings and blue cheese, the health benefits of baked cauliflower, and combines in a convenient Buffalo Cauliflower Casserole for supper!

Buffalo Cauliflower Casserole

I’m roasting a big chicken today and need a tasty side dish to go along with it.  We love buffalo chicken wings so I thought I’d give these flavours a try in a vegetable side dish.  Cauliflower buffalo bites are a natural go to for a vegetarian chicken wing but I’m looking for more of a casserole than a dipping dish.  Here is the delicious alternative I came up with!

Prep time: 15 min.  Cook time: 20 min.  Total time: 35 min.

Ingredients

  • 1 head of Cauliflower
  • 2 Tbsp Olive Oil
  • 1 tsp garlic
  • 1/2 Cup Frank’s Buffalo Wing Sauce
  • 4 oz. (125g.) blue cheese crumbles
  • 1/4 Cup Sour Cream
  • 1/4 Cup Mayonnaise
  • 1 tsp. Worcestershire
  • 2 Tbsp Chives (green onion can be used as a substitute)
  • french fried onions
  • 1 Tbsp Chives for garnish
Preparation

Preheat oven to 450F.

Cut the cauliflower into bite size chunks.  Toss the cauliflower, garlic and olive oil in a medium sized roasting dish until the cauliflower is completely covered.  Roast the cauliflower for 20 minutes at 450F or until it is a golden brown colour.  Remove from the heat and lower the temperature of the oven to 300F.

While that is roasting whisk together the sour cream, mayonnaise, worcestershire, blue cheese crumbles and 2 Tbsp of chives.  Set aside.

Pour the buffalo wing sauce over the roasted cauliflower and stir until it is completely covered.  Dot the top with large spoonfuls of the blue cheese mixture.  Sprinkle with the french fried onions. Place back in the oven for about 5 minutes or until the cheese is warm and melty and the onions are warm and crispy.

Remove from the oven, sprinkle with the remaining tablespoon of chives and serve!
