I came up with this ginger snap pears recipe one day when I needed a quick dessert on short notice.
We were living in a remote isolated town with only basic groceries available, and with 3 small kids at home I didn’t have time to go to the store anyway! Here’s what I had to work with in my cupboard…
- day old ginger snap cookies
- a can of pears
- a few baking supplies (no time to bake anyway)
- other odds and ends not at all related to desserts
- no chocolate (my go to for desserts) because I had eaten it all sneaking bites during nap time! Oh no!
So the ginger snaps were starting to get crumbly but they still tasted good. With a little jazzing up they could be great!
With a little creativity I came up with this quick and elegant dessert perfect for when you have unexpected company for dinner.

Ginger snaps and pears with vanilla undertones. Delish!
- 2 cans pear halves
- 10 or so ginger snap cookies
- 4 tsp greek yogurt
- 1 tbsp honey
- 2 tbsp honey
- 1 tsp vanilla extract or bourbon if you like a little kick!
Place the ginger snap cookies in a sealed baggie and crush them into crumbs. Set aside some of the larger pieces for garnish. Dump the crumbs onto a plate or wide bowl.
Dip the rim of a martini glass, dessert dish or ramekin in the honey, then into the cookie crumbs.
Spoon the remaining crumbs into the bottoms of the glasses.
Open the cans of pears and drain out the juice. Set two pear halves in the centre of each glass.
Fill the centre of each pear with a teaspoon full of greek yogurt.
In a small bowl stir together the 2 tablespoons of honey and teaspoon of vanilla (or bourbon).
Drizzle over the pears and yogurt.
