This Sweet Tart Slushy is a favourite drink on a hot summer day in our backyard! Sometimes you really can have too much of a good thing so what do you do when you have to much fresh fruit floating around? Make a party drink! This sweet tart slushy is sweet and tangy and so refreshing when the temperatures reach a scorching 40C here on the prairies. Best of all it uses fruits you can easily grow in abundance in your back yard or pick up a plenty at the farmers market!
This Sweet Tart Slushy is great for when your chillin’ by the pool.
Sweet Tart Slushy Recipe
Sweet Tart Slushy
- 3 Cups Raspberries
- 3 Cups Rhubarb cut into 1" pieces
- 1 bunch mint leaves
- 3 Cups Water
- 2 Cups Sugar
- 2 Cups Orange Juice concentrate
- 2 Cups Pink Lemonade concentrate
- 2 Litres Grapefruit flavoured pop (like Fresca)
In a large pot bring the Raspberries, Rhubarb and Mint to a boil in 3 cups of water.
Simmer for 10 minutes.
Mash the fruit in the water.
Strain. Discard the pulp but reserve the juice.
Add the sugar, orange juice and pink lemonade concentrates into the raspberry rhubarb juice and mix well.
Pour into a large container and seal with a tight lid.
Freeze overnight to create a super yummy sorbet!
Use an ice cream scoop or sharp edged spoon and scrape across the top of the sorbet. Fill a cup about 3/4 full with the sorbet.
Top with the grapefruit flavoured pop and stir gently until you get a slushy mixture.
Store the remaining sorbet in the freezer until the next time!
Having a party? No problem! This is a great recipe to make the night before. Just add 1 cup of vodka to the mix before you freeze!
I like to use this recipe in my Nostalgia Margarita and Slush Machine so I don’t have to wait overnight for the freezing time. I just pour the mix into the machine along with the ice cubes and half the amount of grapefruit flavoured pop. Turn on the machine and blend for 5 minutes. Viola! Instant slushy.
