These particular thin blue line cookies are a soft cakester style cookie and taste oh so good.
February 1st is RCMP Appreciation Day here in Manitoba and we like to recognize it with some fun snacks in our family, like these thin blue line cookies. February 1st was the day the RCMP was established which is why we celebrate it in addition to Police Week which is in May every year. Police week celebrates all police agencies across North America.

Here’s what you’ll need to get rolling on these thin blue line cookies
Thin Blue Line Cakester Cookies
- 2 1/2 Cups Flour
- 1 1/2 Cups Sugar
- 1/4 Cup Cocoa Powder preferably dark cocoa
- 1 tsp baking soda
- 1 tsp salt
- 2/3 Cup vegetable oil
- 4 eggs
- 1 tsp black gel food colouring I use Wilton brand
- 1 container white vanilla or cream cheese icing
- 1/2 tsp blue gel food colouring I used Wilton sky blue here
In a large bowl or mixer combine the flour, sugar, coca, baking soda and salt. Stir until well combined.
Add in the oil, eggs and black food colouring. Stir until combined. Mix well so there are no lumps. The dough should be thick and slightly sticky.
Roll into 1" balls and place on a baking sheet lined with parchment paper.
Dust your hands lightly with flour if the dough is sticking to your hands.
Bake at 350F for 8 - 10 minutes.
Mix the blue food colouring with the icing.
Spread one cookie with a thick layer of icing and gently sandwich with another cookie.
These cookies are perfect for making with kids. It’s an easy recipe and they have so much fun rolling the balls. (Not to mention licking their fingers after!)
Like many of my recipes these thin blue line cookies are dairy free, and can be nut free if you double check for nut contamination warnings on your ingredients, making them a fun treat to share at school! The Wilton brand food colouring I’m using here does have a “may contain nuts” warning, but I’m sure that all you nut free mama’s have a brand that you already know is safe!
